For the Table ~ House-made Cheddar Jalapeño Corn Bread
1st Course ~ Barbecued Gulf Shrimp
Preparation: Fresh Gulf Shrimp are lightly sautéed then tossed in a combination of house Cajun spices, garlic, lemon & Worcestershire and finished with a bit of sweet cream butter to make a smooth silky sauce.
2nd Course ~ Heirloom Tomato & Summer Corn Salad
From Local Long Island Organic Farms
Preparation: Sliced local Heirloom Tomatoes and Local Roasted Sweet Corn “for that touch of smokiness” drizzled with house made Summers Bounty Green Goddess Dressing
3rd Course ~ Southern Fried Chicken & BBQ St. Louis Ribs
(served with sampling of classic southern sides)
We start with organic chickens which are raised free-range on a diet of actual vegetables, are certified-humane and air-chilled. Now that is chicken as it should be. These are combined with Berkshire Heritage St. Louis Ribs which are certified pasture raised with No antibiotics or hormones.
Preparation: We long soak the Chicken in a marinade of fresh buttermilk, herbs and spices. It is then rolled in flour and pan fried till crisp on the outside & juicy on the inside. The Ribs are dry spiced rubbed, slow grilled until “fall off the bone” tender. They are then lightly basted with a house made BBQ Sauce for a sweet and spicy finish.
Fourth Course: Peach Cobbler ~ Vanilla Gelato
Summer peaches are slow baked and topped with a southern biscuit like pastry. Served warm with a scoop of vanilla gelato.
