For the Table : House Tortillas Chips
Fresh Salsa ~ Guacamole

First Course: Ceviche
Red Snapper ~ Scallops ~ Shrimp ~ Lime ~ Onions ~ Tomato ~ Cilantro & Chiles

Preparation: Thin slices of scallops, red snapper & gulf shrimp are quickly marinated in a mixture of fresh lime juice, cilantro and chiles. Julienne red onions and chopped tomatoes are added at the end for a bit of crunch. Served with plantain chips for dipping.

Second Course: Chile Relleno ~ Ranchero sauce
Poblano peppers, Queso Fresco, Oaxaca, & Monterey Jack Cheese. Mexican Tomato Sauce

Preparation: Small poblano chiles lightly roasted and peeled. They are filled with delicate mixture of cheeses. Pan fried and served on a bed Ranchero sauce.

Third Course: Flautas y Enchiladas
Corn Tortillas ~ Shredded Chicken & Beef ~ Red Chile Sauce

Preparation: Flautas are a flour tortilla filled with slow roasted chicken then pan sautéed until crisp, served over cabbage slaw. The enchiladas are a corn tortilla gently filled with a shredded beef and topped with shredded cheese, baked till golden brown and garnished with red chile sauce, sour cream and pico de gallo.

Served with sides of classic re-fried beans and Mexican rice.

Fourth CourseFlan de Coco y Sopapillas

Preparation:  A silky coconut custard with a light caramel top. The sopapillas are a crisp pastry drizzle with a touch of honey for sweetness.
